昆布巻き2013大成功


やったぜ。10回目にして大成功。

以下メモ。
身欠きニシンは20時に昆布を入れた米汁につけて、翌日13時に調理開始。
身欠きニシン2/3身に40cmの昆布を2枚巻く。
昆布戻し汁に酒を入れて灰汁が出来るまでは蓋なしで煮て、そこから圧力20分。後再度蓋なしで煮詰める。
砂糖、みりん、醤油を入れて、落し蓋をして圧力20分。蓋なしで1時間ほど煮詰める。
